German Pancakes

This is one of my favorite recipes, very simple, but always good. I can also say this is one of my "own" recipes because I totally brought it to school in elementary and it was the only thing I new how to make. Let's just say I made it almost every weekend between for a few years. 

The recipe is very simple. 1 Eggs, 1/4 cup flour, 2 Tbs butter, 1/4 cup milk (per serving). Preheat oven to 475 degrees, mix in bowl, poor a healthy amount of butter at the bottom of dish you want to cook it it (I like to cook each portion on its own, most just cook it all in one big casserole dish) then poor in the mixture and back for 12-15 minutes. 


I like to cook a sunny side egg and some bacon along with powered sugar. 

Incredibly simple, yet oh so good. 

What I would have done different: I went a little lite on the amount of mix in each bowl, doesn't hurt to 2x/3x the recipe for larger pancakes.

Cinnamon Rolls


Cinnamon Rolls

Sorry I am posting this a week late, but better late than never. This week I picked a recipe from The Pioneer Woman for delicious Cinnamon Rolls. It was a pretty simple recipe and you can read her website for full details and instructions. I will give you the reader digest version. 

First I mixed the up the fluids for the dough. Added the yeast and let sit for two hours. 

Once it had risen enough I rolled it out and split it in half. 

Generously added butter, sugar, and cinnamon. 

Baked for 45 minutes and they were good to go. 

Also the frosting is amazing on these! 

What I would have done different: I think I rolled them to be a little to thin, and I don't think I added enough yeast, because they didn't rise as much as I would have liked.

Quiche Lorraine

 I love a good quiche. For this one I found a recipe online and made a few changes. Here is what you will need:
  • Eggs (3)
  • Half n half - (1 1/2 Cup)
  • Bacon -(to your hearts desire)
  • Asparagus - (2 stocks)
  • Pie Crust - (Make your own or be lazy like me and buy it) 
  • Cheese- (1/2 cup grated)
  • Green Onions (1)

Preheat oven to 375 degrees. Start by cutting up your bacon and cooking it in a skillet. The original recipe doesn't tell you to do this but I like my bacon nice and crispy. Cook till about 3/4 of the way you normally like your bacon. . 


Dry the bacon and lay across the bottom of the pie crust. Then sprinkle some grated cheese across (I used Parmesan and Gruyere). Then your sliced asparagus. I blanched the asparagus but don't think you really need to. 
 Then whisk three eggs with 1 1/2 cups of half n half and poor over the mix. I then diced up some green onions and threw over the top. 
 Toss in the over for 25-35 minutes. It took me about 45 minutes, but I think thats because I didn't preheat the oven quickly enough. 
It's best to let is sit for 15-20 minutes to set and then cut and serve. 
I paired mine with a fresh grapefruit with powdered sugar. 

I have to say this is my favorite breakfast so far. I haven't had quiche in a long time but i'm looking forward to having leftovers for breakfast tomorrow.

Eggs Benedict

Eggs Benedict

Me and my wife love Market Street Grill. As often as we can we go there for eggs Benedict and steak for Sunday morning brunch. This is the first time making hollandaise sauce.

Here's what you need:

  • 6 eggs
  • 1 tsp lemon Juice 
  • 1 Tb Salt
  • 1 stick of Butter
  • Ham
  • English Muffin 


It's hard to get these all done around the same time, which is important or one of the three main ingredients is colder than the rest. Start by getting your water hot for the poached eggs. The best way to poach your eggs is get the water hot to around 190 degrees, put a teaspoon of salt  into the water and about a tablespoon of lemon juice. Break each egg individually into a small cup or ramekin and slowly release them into the hot water. Cook for 3-5 mins, watch closely so you don't over cook the yolk. When ready place on a paper towel and dry briefly.






Then while the eggs are cooking start your hollandaise sauce by melting one stick of butter. Place four egg yolks in a blender with 1 tsp of salt and 1 Tbs of lemon juice. Slowly add the melted butter in the blender as you are mixing.

 

If you can cut your ham into round small pieces. I used a cookie cutter and sliced my ham not to thin. I then grilled them quickly with some extra virgin olive oil.



Toast your English muffins, lay the ham on top, lay your poached egg on, and then drizzle hollandaise sauce across.

Eggs, Toast & Cream of Wheat

Ya ya, I know this is nothing special. I expect to run out of ideas pretty quickly but this breakfast is one I havent had in years. I grew up a majority of my childhood with a big bowl of cream of wheat and a piece of toast before school.  Its been a few years so I thought I would give it another try. Here is what was included:

What you need:

  • 3 large eggs
  • 4 pieces of toast 
  • 1 cup milk
  • 1/2 cup brown sugar
  • 1 cup cream of wheat
  • Extra virgin oil, salt & pepper


Sunny side eggs: I spent a few hours this morning watching and seeing what was the best way to make sunny side eggs so there was no white uncooked. The three options I found was first (after placing some butter in a non stick pan and turning it up to medium heat) place a lid over the eggs and steam cook them all the way. The 2nd options would be to use broil option on a gas oven at the very end to blast them with heat and cook the tops. The 3rd is basting the egg with hot butter across the top thus cooking it from the top and bottom. I went with the easiest, and I think most reliable by using a pan. After they are ready I throw a little extra virgin oil over them with crack black pepper and sea salt.

Toast: I have complained my whole life that I have never had a toaster that cooked evenly the whole piece  and didn't jump 50 degrees when you go from 5 to 6. Poor me....I know white people problems.
Any way I found the most amazing toaster ever here.

Cream Of Wheat: Now if your just using the box stuff its pretty simple. Bring your water to a boil, continuously mix in the cream of wheat, let cool after about 10 mins and serve. Now what is essential for a good bowl is a mix of salt, cream/milk, and brown sugar. Most of the time I will mix this in on the spot but it does change the temperature of the food so if you prefer to keep it hot I would suggest sprinkles them over the top.



Why.

Breakfast is by far my favorite meal of the day. I have spent the last few years spending my sunday mornings making breakfast for friends and family. This year I made a New Years resolution to make a different type of breakfast every sunday. So if i'm not wrong I will have to come up with 52 unique breakfast meals this year. Bring it on!
