This is one of my favorite recipes, very simple, but always good. I can also say this is one of my "own" recipes because I totally brought it to school in elementary and it was the only thing I new how to make. Let's just say I made it almost every weekend between for a few years.
The recipe is very simple. 1 Eggs, 1/4 cup flour, 2 Tbs butter, 1/4 cup milk (per serving). Preheat oven to 475 degrees, mix in bowl, poor a healthy amount of butter at the bottom of dish you want to cook it it (I like to cook each portion on its own, most just cook it all in one big casserole dish) then poor in the mixture and back for 12-15 minutes.
I like to cook a sunny side egg and some bacon along with powered sugar.
Incredibly simple, yet oh so good.
What I would have done different: I went a little lite on the amount of mix in each bowl, doesn't hurt to 2x/3x the recipe for larger pancakes.
